Baked Egg Cupcakes
prep time: 10 minscook time: 25 minstotal time: 35 mins
These are mini quiche cupcakes baked eggs all in one pan and so versatile. You can make whatever everyone loves all in one pan.
ingredients:
Filling suggestions
chopped peppers, mushrooms, artichoke hearts, asparagus, onions,
cooked meats: crumbled or chopped: sausage, bacon, ham, chicken. steak, chopped pepperoni, salami or other meat you like
shredded potatoes
minced onions or garlic
spinach leaves, kale, escarole
chopped cooked broccoli
cheeses shredded: cheddar, swiss, provolone, mozzarella or any kinds you like
instructions:
homemade pie crust or store bought
4 eggs
1/3 cup heavy cream or milk
salt, pepper, cayenne pepper, and garlic powder to taste
Optional: 1 teaspoon Italian seasoning
Beat together until blended.
Oil spray the tins with cooking oil. Line each with pie crust.
Place cheese on the bottom of the crust then meat. Pour a little of the egg mixture over each one. Bake in a preheated panggangan at 375 degrees until the middles are set and starting to brown.
Note: you can make these crust less no dough, just pour into greased tins and bake.
